Shredded Chicken for Dummies...meaning me




There's not a whole lot to this post, other than why did it take me so freakin' long to figure this trick out!?  I'm sure you new about this already, because I'm usually the last to figure stuff like this out.  I can tell you it's changed my outlook on chicken. Forever.

I pressure cooked 6 chicken breasts from frozen solid to juicy and tender in 40 minutes.  Then I stuck them in my mixer with my batter attachment and had three 2-cup baggies of perfectly shredded chicken in 3 minutes.  What!?

I've used it to make the pan enchiladas posted here, chicken salad, added it to cheese quesadillas, & put it on salad.  I'm going to use it for chicken pot pies, too.  Genius!!

If you don't have a pressure cooker, you could crock-pot your chicken.  It would be delicious grilled or baked, too.  Even boiled would be a snap.
